In Austria, marketing standards that conform to EU-standards are applicable for the categorization of beef carcasses and porksides. These standards are legally based, among others, on the Grade of Goods Regulation by the Austrian Federal Ministry of Agriculture and Forestry, Environment and Water Management.

This regulation comprises:

  • classification into grade and quality categories
  • category designation
  • carcass identification
  • cut-up standards
  • weighing
  • recording

Categorization is carried out by officially certified agencies.
